Ingredients
  

  • 2 cups button mushrooms cleaned and halved
  • 1 tablespoon butter
  • 1 teaspoon garlic finely chopped
  • ½ teaspoon ginger finely chopped
  • 1 small green chili finely chopped (adjust to heat preference)
  • 1 teaspoon vinegar
  • 1 teaspoon green chili sauce
  • 1 teaspoon cornflour
  • ½ cup creamy milk or half-and-half
  • Salt to taste to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon chili flakes optional
  • Fresh coriander cilantro, chopped for garnish

Method
 

  1. Parboil the mushrooms :- Place the button mushrooms in a saucepan, cover with water, and bring to a boil. Simmer for 5 minutes, then drain and set aside. This step ensures the mushrooms are tender and ready to absorb flavor.
  2. Sauté aromatics:- In a skillet, heat the butter over medium heat. Add the chopped garlic, ginger, and green chili. Sauté for 10 seconds, just until fragrant.
  3. Add acidity and spice :- Stir in the vinegar and green chili sauce, cooking for another 10–15 seconds. These ingredients provide a subtle tang and heat that balance the creaminess.
  4. Thicken the base :-Add the cornflour and sauté briefly—just 5 seconds. This will help thicken the sauce when the milk is added.
  5. Create the creamy sauce :- Pour in the creamy milk and stir well. Let it simmer gently for 2–3 minutes, allowing the sauce to thicken to a smooth, pourable consistency.
  6. Season and finish :-Add salt, black pepper, and chili flakes to taste. Stir in the boiled mushrooms and cook for another 2–3 minutes, ensuring they are well coated and infused with flavor.
  7. Garnish and serve :-Turn off the heat and sprinkle with fresh coriander. Serve hot alongside toasted garlic bread, rice, or pasta.

  1. For a thicker sauce, add a touch more cornflour dissolved in milk.
  2. To keep it mild, skip the chili flakes and reduce the green chili quantity.
  3. For added depth, a splash of white wine can be added before the milk.
