Method

Method For Vegeatable Rice:
  1. In a hot pan or wok, sauté the chopped ginger and garlic until aromatic.
  2. Add capsicum, sweet corn, and carrots. Stir-fry until the vegetables are tender-crisp.
  3. Add the boiled rice and mix well with the vegetables.
  4. Season the rice with soya sauce, green chili sauce, vinegar, salt, and black pepper.
  5. Stir-fry everything together for at least 1 minute, allowing the rice to absorb the flavors.
Method For Cheesy Mushrooms:
  1. Heat butter in a pan, then add chopped ginger and garlic. Sauté until fragrant.
  2. Add the butter mushrooms and cook for a couple of minutes.
  3. Pour in some milk, then season with salt, black pepper, green chili sauce, and a splash of vinegar.
  4. Let it sauté for 1-2 minutes so the mushrooms soak up all the flavors.
  5. Add cheese on top and let it melt slightly. Serve hot alongside your vegetable fried rice.
Tips for the Best Vegetable Rice and Cheesy Mushrooms
  1. Use day-old rice for the best texture in fried rice. Freshly cooked rice tends to be too soft and sticky.
  2. Adjust the level of spice by varying the amount of green chili sauce.
  3. For extra flavor, you can sprinkle some fresh herbs like chopped spring onions or coriander before serving.
  4. If you prefer a vegan version, substitute butter with olive oil, milk with plant-based milk, and cheese with vegan cheese alternatives.

Notes

Frequently Asked Questions (FAQs)

  1. Can I use any type of rice for vegetable fried rice?
Yes! While day-old or leftover white rice works best because it’s drier and less sticky, you can also use brown rice or jasmine rice. Just make sure the rice is cooled before frying to prevent clumping.
  2. How can I make the cheesy mushroom recipe vegan?
To make it vegan, substitute butter with olive oil or vegan margarine, use plant-based milk like almond or soy milk, and swap regular cheese for vegan cheese alternatives.
  3. Can I prepare this meal in advance?
You can prep the vegetables and mushrooms ahead of time, but it’s best to cook the fried rice and cheesy mushrooms fresh for optimal flavor and texture. If needed, store separately in airtight containers and reheat gently before serving.
  4. How spicy is this recipe, and can I adjust the heat?
The recipe has a mild to moderate spice level thanks to the green chili sauce. You can easily adjust the heat by adding more or less chili sauce according to your preference or skipping it altogether for a milder version.
